Funfetti Cheesecake Cookies are the perfect easy cookie recipe for Valentine's Day. Your Honey will love these chewy little cookies. They are so easy to make that even your kids can help with this one! We're using a Funfetti Cake Mix and JELLO Instant cheesecake pudding mix to make this recipe super quick and easy for your Valentine

✅ INGREDIENTS

  • 1 box (15 oz) Funfetti Cake Mix
  • 1 box (3.5 oz) JELLO Cheesecake Pudding mix
  • 2 eggs
  • 1/3 cup vegetable oil
  • nonpareils sprinkles

✅ INSTRUCTIONS

  1. Preheat oven to 375 degrees F.
  2. In a medium bowl, mix together Funfetti cake mix, cheesecake pudding mix, eggs, and oil. Stir until fully combined.
  3. Roll dough into 1-inch balls. Roll balls in nonpareils sprinkles. Place cookies 2 inches apart on an ungreased baking sheet.
  4. Bake 6-8 minutes until cookies are lightly browned.

✅ NOTES

  • If you can't find Funfetti Cake mix, substitute a basic white cake mix + 2 Tbsp of sprinkles (jimmies work best for baking inside cookies.)
  • Do not roll the cookies in large sprinkles. They may melt on the pan while baking.
  • Use the same recipe with holiday sprinkles to dress up your cookies for any holiday.

If you’re looking for a quick dessert around Valentine’s Day, this is a great option.

You can make the dough in less than the time it takes your oven to heat up.

And they bake in about 6 minutes.

KEY TO SUCCESS #1 – FUNFETTI BRINGS THE FUN
Oh yes! These cookies are a delight to look at with all their sprinkled goodness on the outside, but don’t mistake the beauty of the sprinkles on the inside.

If you’re not familiar with a Funfetti cake, it’s basically white cake with rainbow sprinkles in the batter.

The sprinkles inside really add to the excitement of the little cutie cookies.

We’re using a Funfetti cake mix in this recipe, but if you can’t find it you can use a basic white cake mix.

A white cake mix is also a great option if you want to customize the color of your sprinkles inside your cake mix.

For the white cake mix, plan to use about 2 tablespoons of sprinkles inside the cookie batter.

Around holidays such as Valentine’s Day, sometimes you can find seasonal varieties of Funfetti cake mix, but they are often hard to find.

If your heart is set on red and pink sprinkles inside your Funfetti cookies, try looking fo Valentine’s Day sprinkles at your local craft store or you can find them on Amazon.

KEY TO SUCCESS #2 – ADD JELLO CHEESECAKE PUDDING MIX
To really amp up the flavor of our cookies, we’re adding a small package of JELLO Cheesecake Instant Pudding Mix.

Be sure to get the small box, which is about 3.5 ounces, and the instant pudding variety.

The pudding mix adds flavor but also moisture to the cookies so that they are nice and chewy.

Mix the cake mix and the pudding mix together in a medium bowl then stir in the eggs and oil until a thick dough forms.

You do not need a hand mixer for these easy cookies.

A simple spoon or spatula will get the job done.

I prefer to use a small cookie scoop to portion out my cookies, but this is optional.

You can use a small spoon if you don’t have a cookie scoop.

We want these cookies to bake quickly so make sure your cookie dough balls about 1 inch in diameter.

KEY TO SUCCESS #3 – ROLL THE COOKIE DOUGH IN SPRINKLES (NONPAREILS)
Listen to me now – use nonpareils sprinkles on the outside of your cookies.

If you’re not familiar with the term nonpareils, they are the tiny ball-like sprinkles that are crunchy when you bite into them.

They are great for using on the outside of the cookies because they will not melt in the oven like some other sprinkles would do.

You can roll the cookie dough in the sprinkles as much or as little as you prefer.

There is really no wrong or right answer here.

After your cookie dough balls are coated in sprinkles, place them about 2 inches apart on an ungreased cookie sheet.

The cookies will not spread much so if you want them to be wider you can flatten the cookies with the bottom of a glass if you prefer.

I tried the cookies both ways and I prefer them unflattened.

The baking time is the same either way.

In a 375 degree F oven, you can expect the cookies to bake in 6-8 minutes.

I know this doesn’t sound like much time but check the cookies after 6 minutes to see if they are browned to your liking.
