Chicken Salad Sandwiches

Chicken Salad Sandwiches are a great finger sandwich option for picnics or parties. You can customize the sandwiches with lots of different mix-ins and serve it in many many different ways, such as on white bread, 7-grain bread, croissants, crackers, or even on a bed of lettuce. Kid-friendly ingredients too!

Ingredients
  • 1 can (12.5 oz) Tyson Premium Chunk White Chicken, well-drained
  • 3 hard-boiled eggs
  • 1 cup cheddar cheese, freshly grated
  • 2/3 cup or more Miracle Whip Salad Dressing
  • Your Favorite Sandwich Bread
Instructions
  1. In medium bowl, use fork to break hard-boiled eggs into fine pieces. Add in canned chicken and shredded cheese. Stir well.
  2. Add in 2/3 cup of Miracle Whip Salad Dressing and mix completely.
  3. Stir in any mix-ins, if desired.
Notes
If desired, add up to 1 cup of mix-ins of your choice.

  • Toasted walnuts or other nuts
  • Seedless grapes, quartered
  • Cherry tomatoes, quartered
  • Diced Onion
  • Diced Celery
  • Raisins or other dried fruit
  • Diced pickles
  • Bacon pieces
Serve on your favorite sandwich, bread, 7-grain bread, brioche buns, croissants, or crackers.
KEY TO SUCCESS #1 – START WITH HARD-BOILED EGGS
This easy Chicken Salad Sandwich recipe starts off with three hard-boiled eggs. You can hard-boil them any way you’d like. I prefer making my hard-boiled eggs in the Instant Pot. They turn out great and are super easy to peel. You can also boil them on the stove or bake them or even sous vide cook them.

After you’ve cooked and peeled the hard-boiled eggs, place them in a medium-sized bowl, and use a fork to break the eggs into small pieces. I mash my eggs into fairly small pieces but you can leave larger chunks if you’d prefer! I make mine smaller because large chunks of eggs or other foods often get picked out and discarded by picky eaters at my house.
KEY TO SUCCESS #2 – PICKIN’ THE CHICKEN
I am a firm believer in the Tyson Premium Chunk White Chicken in the can for Chicken Salad Sandwiches. You can use other brands of canned chicken or you can shred freshly cooked chicken or rotisserie chicken for this recipe. If using canned chicken, be sure to drain the chicken well before putting it in your chicken salad.

I like to use my fork to break up the chicken in the can before I add it to the eggs in the bowl. Add in the shredded cheddar cheese as well. And be sure to freshly shred the cheese if you have the time. Freshly shredded cheese is so much better than the packaged shredded cheese in recipes like this.

Stir in your mix-ins then add the Miracle Whip Salad Dressing. Depending on how much of the mix-ins you use, you may need to add a little more Miracle Whip. You can use really mix-ins that you like – diced apples, dried fruit, nuts, celery, onion, pickles, etc. But you really don’t have to add anything. We eat the Chicken Salad without any add-ins quite often and we all love it.
KEY TO SUCCESS #3 – SERVE ON YOUR FAVORITE BREAD
When serving Chicken Salad Sandwiches at a picnic, I like to use white sandwich bread. I cut the sandwiches in half diagonally. If serving them as finger sandwiches at a party, the Chicken Salad would be fantastic on croissants, thick 7-grain bread, brioche buns, or even lettuce leaves.

You can make these sandwiches as fancy or as simple as you want. It’s a very versatile recipe that can be used in so many different ways.
