Prep Time: 2 HOURS
Cook Time: 1 HOUR 30 MINUTES
Cooling Time: 1 HOUR
Total Time: 4 HOURS 30 MINUTES

✅ INGREDIENTS

FOR THE CAKE
  • 3 boxes (15 oz each) white cake mix
  • 3 3/4 cups water (divided)
  • 9 eggs (divided)
  • 1 cup oil (divided)

FOR THE FROSTING

  • 2 recipes Vanilla Buttercream Frosting*
  • yellow gel food coloring

✅ INSTRUCTIONS

  1. Preheat oven to 350 degrees F. Line the bottom of two 8-inch round cake pans with parchment paper and grease well. Set aside.
  2. In a large bowl, combine 1 box of cake mix with 1 1/4 cups water, 3 whole eggs, and 1/3 cup of vegetable oil. Use a hand mixer to blend ingredients for 2 minutes. Divide batter evenly between two prepared pans.
  3. Bake cake layers for 29-34 minutes until a toothpick inserted into the center comes out clean.
  4. Allow cakes to cool for 10 minutes in the pan then remove to a sheet of waxed paper to cool completely.
  5. Repeat steps 1-4 for the two additional boxes of cake mix. You should have a total of 6 cake layers when done. Allow cake to cool completely.
  6. Level cake layers using a serrated knife.
  7. Make vanilla buttercream frosting according to directions. Add several drops of yellow food coloring until you get the desired shade. Mix well.
  8. Stack up 5 of the 6 cake layers, adding a layer of yellow frosting between each one. Wrap the Snow White doll with plastic wrap up to her waist then press it into the middle of the cake layers. The cake should come up slightly below the doll's waist. If it doesn't, remove the doll and add the 6th cake layer then reinsert the doll. Place the cake into the refrigerator to chill for at least 30 minutes.
  9. Remove the cake from the refrigerator. Starting at the top of the cake, use a serrated knife in a sawing motion to carve the cake into a bell shape. Work toward getting the general shape then you can refine it further from there.
  10. Add a crumb coat by using a knife or offset spatula to spread a thin layer of yellow frosting all over the sides and top of the cake. Return the cake to the refrigerator to chill for at least 30 minutes.
  11. Add the remaining yellow to a piping bag that has been fitted with an open star tip, such as the Wilton 1M tip. Secure with a clip.
  12. Remove the cake from the refrigerator. Starting at the bottom of the cake, pipe rosettes all the way around the bottom then work your way up the cake. The rosettes should be touching. If there are any gaps, you can fill them by piping stars between the rosettes. As you get to the top of the cake, pipe the rosettes right up to the doll's waist, making sure you completely cover the plastic wrap.

KEY TO SUCCESS #1 – CHOOSE A DOLL WITH A PAINTED TOP

One of the keys to this easy Snow White Cake is finding the perfect Snow White doll to put in the middle of the cake.

Look for a Snow White doll that has a top of her dress that is painted on.

Using a doll with a painted dress will allow you to decorate the bottom of the dress and keep the authentic Snow White doll on the top.

I found a Disney Princess Royal Shimmer Snow White doll on Amazon for just a few dollars and it was perfect for this Snow White cake.

Wrap the Snow White doll in plastic wrap and then press it into the middle of the cake layers.

The cake layers should be nearly as high as the doll’s waist.

KEY TO SUCCESS #2 – LEVEL THE CAKE LAYERS BEFORE ASSEMBLING

Snow White’s dress is made from five layers of cake.

We’re using three boxed cake mixes to keep things simple in this easy recipe.

Three cake mixes will make a total of six 8-inch cake layers, but we will only need five layers for Snow White’s dress.

After the cake layers have been baked and cooled, use a sharp serrated knife or a cake leveler to level off four of the cakes so that they are smooth on the top.

You don’t have to worry about leveling the fifth cake layer that will be used for the top of the cake.

Since we are shaping the cake into a bell, the rounded top will help achieve a nicely rounded bell shape.

It’s important to work with level cakes so that your doll dress cake will not be wobbly when assembled.

For instructions on how to carve the cake into a bell shape, see our Cinderella Doll Dress Cake post.

KEY TO SUCCESS #3 – USE HIGH-QUALITY GEL FOOD COLORING

This Snow White Doll Dress Cake is such a pretty shade of yellow!

I used Americolor gel food coloring in the shade Lemon Yellow and it was perfect for the Snow White’s dress.

Gel food coloring is highly pigmented so you end up using less food coloring to tint your Vanilla Buttercream Frosting the desired shade.

It won’t affect the taste or texture of your frosting like you might experience with a liquid food coloring.

A few years ago, I purchased the Americolor Student Kit that contains several different colors at a discounted price.

This kit can be used for many different cooking projects and they last a long time since you use so little.

Start with a few drops of the yellow food coloring then mix the frosting well.

Be sure to scrape down the sides of the bowl as you go along so that your frosting will be a uniform color.

If your frosting is not the desired shade of yellow, you can add a few more drops of gel food coloring.

Blend it well then see if the color lives up to what you’ve envisioned for Snow White’s dress.
