Big Ol’ Chocolate Chip Skillet Cookie
Have you ever seen those skillet cookies they serve in family restaurants where they just put a couple scoops of ice cream into the skillet with the hot cookie and serve it with chocolate syrup drizzled over the top? This is what I'm talking about! Now you can make it at a home.

Yield: 6 SERVINGS 
Prep Time: 15 MINUTES 
Cook Time: 30 MINUTES 
Total Time: 45 MINUTES

✅ INGREDIENTS

  • 1/2 cup butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips

✅ INSTRUCTIONS

  1. Preheat oven to 325 degrees F.
  2. Cream together butter and sugar until light and fluffy.  Add egg and vanilla and beat well.  
  3. Slowly add dry ingredients and mix well.  Stir in chocolate chips. (Reserve some to sprinkle on the top, if desired.)
  4. Spread half the cookie dough into a well-greased oven-safe 9-inch skillet. Bake 25-30 minutes or until light brown and set in the middle.  

NOTES

  • Bake time will vary depending on the size of your skillet.  I used a 9" cast iron skillet and it took about 30 minutes to bake.

This Big Ol’ Chocolate Chip Skillet Cookie is our take on the ever-popular Chili’s Grill & Bar Skillet Chocolate Chip cookie or a pizookie. The chocolate chip cookie is baked in a big skillet then topped with ice cream and chocolate syrup for the ultimate skillet cookie dessert.

Do you call it a pizookie or a skillet cookie?

Chili’s restaurant serves up skillet cookies that are similar to this one and we all just love it!

You can serve it family-style and just let everyone dig in with their own spoon.

Or you can cut it into pizza slices and top with individual scoops of ice cream.

It is best served warm, which makes it great for a last-minute dessert idea.

KEY TO SUCCESS #1 – SOFTEN THE BUTTER
This cookie recipe starts by creaming together the butter and both kinds of sugar.

Make sure your butter is softened before you start mixing it using a hand mixer.

The best way to soften the butter is to leave it out on the counter for a half hour or more.

If you are in a rush, you can soften the butter in the microwave.

Microwave the cold butter on the defrost setting for 20-30 seconds.

You don’t want the butter to melt at all, but you want it to be soft enough to combine with the sugar easily.

Use your electric mixer to cream the butter and sugar together until the mixture is light and fluffy.

This is the key to a great cookie.

KEY TO SUCCESS #2 – USE THE RIGHT SIZE SKILLET
For this skillet cookie, you will need a 9-inch skillet or a 10-inch skillet.

I highly recommend using a cast-iron skillet for an authentic look and feel, but you can really use any oven-safe skillet.

We’re baking the skillet cookie at 325 degrees F so any skillet that can withstand the heat will work just fine.

If using a cast-iron skillet, I prefer to wait until right before I add the cookie dough to grease the pan.

Spray the skillet with non-stick cooking spray or grease it with vegetable shortening like Crisco.

Then just spread all that cookie dough goodness to cover the bottom of the skillet.

KEY TO SUCCESS #3 – WATCH THE BAKING TIME
I use a 9-inch cast-iron skillet to make these skillet cookies and my bake time is right at 30 minutes.

Your baking time could be longer or shorter depending on the size of your pan.

A smaller pan will need more time to bake because your dough is thicker.

A larger pan will need less time because the dough is more spread out.

Since you will be serving the skillet cookie while it is warm, you will want to make sure that the dough is set in the middle.

KEY TO SUCCESS #4 – DRESS THAT COOKIE UP!
While a Chocolate Chip Skillet Cookie a la Chili’s is perfectly tasty on its own, you can really dress it up with a few scoops of ice cream and a drizzle of chocolate syrup.

These little extra touches are what make a skillet cookie so decadent and delicious.

When the pizookie comes out of the oven, it’s going to be piping hot.

If you have a few extra minutes to spare, you can let it sit uncovered for about 5 minutes so that it will be easier to eat.

But if you can’t wait, just plop that ice cream on top and grab a spoon.

Since it is currently the year 2021, I should also mention that it is perfectly acceptable to cut your skillet cookie into pizza slices and serve them up individually.

That is, of course, the smarter choice to avoid germs and whatnot.

Also, remind your kiddos that the skillet is HOT.
