Happy Cinco de Mayo! Did you have a festive day?

We celebrated Mother’s Day a week early with lunch at my house. Since it was Cinco de Mayo, we made fajitas and all the fixings. I’m going to have to share my recipe for Mexican rice sometime because it’s really delicious! My nephew, Mason, really loves it. And no surprise here – it’s easy to make!

But today, I want to share my recipe for easy 5-minute salsa. This recipe is quick and requires no cooking. It’s easy to make in your blender or food processor!
5-Minute Restaurant-Style Salsa – The Secret Ingredient
A can of diced tomatoes and a can of Ro-tel tomatoes and green chiles are the base of this salsa recipe. You can adjust the other ingredients according to your own taste. I used about 2/3 of a large onion, 3 cloves of garlic, and 3 jalapenos. I removed the veins and seeds of the jalapenos so that the heat would not be overpowering. You can certainly leave some of them in if you’d like.

Salt and cumin are added before pulsing the mixture in the blender. Not too much, you don’t want to completely pulverize your salsa. Now, taste with a chip and see if you need to add more seasonings or more heat.

I wait to add the cilantro because I don’t want it to be blended up too much. I like to be able to see the cilantro instead of just having green salsa.

Go ahead and add a big handful of cilantro and the juice of half a lime. Of course, the lime is optional. These are the basics of a great salsa, but you can customize to your liking.
The secret ingredient in this recipe is a touch of honey. It adds a wonderful depth of flavor. Many salsa recipes include sugar, but why be ordinary when you can be extraordinary? Go ahead and try it. I think you’ll agree that it makes this recipe special.
