You’re going to adore this Glazed Cherry Bread with its perfectly soft texture and pretty pink cherry glaze. It’s a quick bread that uses simple pantry ingredients and requires no yeast and no rising. And I’m sharing the trick to get this pretty pink color for your glaze!

✅ INGREDIENTS

FOR THE BREAD
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/2 cup oil
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 jars (10 oz) maraschino cherries
FOR THE GLAZE
  • 2 cups powdered sugar
  • 2 Tbsp melted butter
  • 1/3 cup maraschino cherry juice
  • 1/2 tsp vanilla

✅ INSTRUCTIONS

  1. Preheat oven to 350 degrees F. Grease a 9x5-inch loaf pan and set aside.
  2. De-stem the cherries and finely chop them. Reserve the juice.
  3. In a medium bowl, mix together the sugar, milk, oil, eggs, and vanilla.
  4. Add in the salt and baking powder. Slowly add in the flour while stirring just to combine.
  5. Gently fold the diced cherries into the batter.
  6. Pour batter into greased loaf pan. Bake 50-55 minutes until a toothpick inserted into the center comes out clean.
  7. Allow bread to cool in pan for 10 minutes then remove to a wire rack to cool completely.
  8. To make the glaze, combine the powdered sugar, melted butter, 1/3 cup of the reserved cherry juice and vanilla. Stir until fully combined and smooth.
  9. Drizzle glaze over bread when completely cool.

KEY TO SUCCESS #1 – STIR ONLY UNTIL COMBINED
The Cherry Quick Bread starts with a mixture of sugar, eggs, milk, oil, and vanilla for the wet ingredients.

Next, we will add the dry ingredients. Add in the salt, baking powder, and all-purpose flour.

Stir the ingredients together only until the mixture is fully combined.

Be careful not to over-mix the bread batter or your bread will not turn out as tender as it can be.

Use a spoon or spatula to mix the ingredients together.

An electric mixer is not necessary for this simple and easy bread recipe.

KEY TO SUCCESS #2 – FINELY CHOP THE CHERRIES (AND RESERVE THE JUICE)
We’re using lots of real cherries in this easy quick bread recipe.

Two 10-ounce jars of maraschino cherries will add the perfect amount of cherry flavor to the bread.

Remove the cherries from the jar and reserve the juice.

If your cherries have stems, you will need to remove them.

Then finely chop the cherries so that they are easier to mix throughout the bread batter.

I used my Kitchen Ninja food processor to chop the cherries. If you don’t have a food processor or chopper, you can use a sharp knife.

The secret to getting the pretty pink color for your cherry glaze is in the cherry juice.

If your maraschino cherries are in bright red juice, then your glaze will be a pretty pink color.

If your cherry juice is not red, then you will need to add food coloring to the juice to make it pink.

Be sure your total amount of liquid in the glaze is 1/3 cup. Don’t add 1/3 cup of juice then add liquid food coloring on top of it.

KEY TO SUCCESS #3 – WAIT TO GLAZE UNTIL COMPLETELY COOL
While it is tempting to add the glaze while the bread is still hot, it is important to allow the bread to cool completely before adding the glaze.

The pretty pink cherry glaze is made with powdered sugar, melted butter, maraschino cherry juice, and a little bit of vanilla.

Put the powdered sugar in a medium-sized bowl then add in the melted butter, cherry juice, and vanilla.

Stir the glaze with a spoon or spatula until it comes together.

If you have some bubbles in the glaze, allow it to sit uncovered for 2-3 minutes then gently stir until the bubbles go away.

Finally, drizzle the glaze over the top of the bread and allow it to run down the sides.

Use your spoon to help the glaze completely cover your bread loaf.

Cut the bread using a sharp serrated knife for perfect slices every time.
