Mexican Layer Dip
Mexican Layer Dip is easily customized to the ingredients you and your family like. You can add white onions, green onions, guacamole, or black olives to name a few. Spice it up by using hot salsa and/or hot taco seasoning. The sky is the limit!

✅ INGREDIENTS


LAYER 1
  • 1 can refried beans
  • 1/2 packet taco seasoning
LAYER 2
  • 1 cup sour cream
LAYER 3
  • 1 cup salsa or picante sauce
LAYER 4
  • 1 cup lettuce, shredded
LAYER 5
  • 2-3 tomatoes, freshly diced
LAYER 6
  • 1 1/2 cups Mexican cheese blend

✅ INSTRUCTIONS

  1. In a small bowl, stir together refried beans and taco seasoning. Spread evenly into the bottom of a shallow dish.
  2. Spread sour cream on top of beans. Gently spread salsa on top of sour cream. 
  3. Top with shredded lettuce and diced tomatoes.
  4. Sprinkle cheese on top. 

✅ NOTES

  • Use more taco seasoning if desired.
  • You can also add guacamole or sliced olives. 

Mexican Layer Dip is the king of the party. But is it a 7-layer dip? A 9-layer dip? Everybody has their own way of putting it together.  This is my fresh take on Mexican Layer Dip.

STACK IT HIGH OR STACK IT LOW
For this Mexican Layer Dip, you can either layer it into a tall bowl or a shallow platter.

A lot of people prefer to layer the dip into a tall glass bowl so that you can see all the pretty layers.

That’s nice and all but my main goal is making delicious food that’s a pleasure to eat.

I prefer a shallow dish or platter because thinner layers make it much easier to get a good bite that includes all the flavors at once.

SPICY BEANS
Refried beans make a great base for this Mexican Dip.

I like to increase the flavor by adding taco seasoning to the beans.

I usually use about 1/2 a packet but you can definitely use more to really spice things up.

TO GUAC OR NOT TO GUAC
Okay, I’ll admit it – we’re not huge guacamole fans around here.

If you’re a fan, you can definitely add a layer of guacamole but I usually don’t.

If you’re adding it in, I’d suggest you put it in between the refried beans and the sour cream.

A SALSA CAUTION
Salsa is a wonderful thing! I love it, I love it, I love it.

But in this recipe, you’ll want to make sure the salsa or Picante sauce that you choose is not too thin or runny.

If you get a thin salsa, you could end up with too much liquid at the bottom of your Mexican Layer Dip.

Don’t get me wrong, it’ll still be wonderful and tasty.

But when you scoop out a spoonful of dip, you might get some runny salsa juice at the bottom of your dish. No bueno.

You can be as neat or as messy as you’d like with your layers.

It doesn’t have to look perfect to be delicious.

You can serve your masterpiece immediately or refrigerate until ready to serve.

But who really wants to wait?
